Extraction, Characterization and Health Benefit of Dietary Chili Pepper (Capsaicin): A Review of Recent Progress
Abstract: Chili peppers are widely eaten spices across the globe, and capsaicin, the major source of the spicy taste, is said to contain a variety of biological functions such as pain relief, anti-inflammation, anticancer, cardio protection, as well as weight loss. In this review, we present the recent progress in various extraction and characterization methods of chili peppers.
