Assessment of Bio-Safety, Bio-Security and Microbial Ecology of Bovine Meat at the Masina Slaughterhouse

Abstract: Background: As a perishable foodstuff, meat has traditionally been regarded as the vehicle for many food-borne diseases in humans. Its composition in water and protein of high biological value makes it a highly favorable niche for the development of microorganisms. Similarly, the transformation of live animals into carcasses and then into meat is generally accompanied by microbial contamination during the process. The aim of this study was to assess the bacteriological quality of meat slaughtered at the Masina abattoir in Kinshasa, with a view to contribute to better consumer protection. Methods: A descriptive cross-sectional study was carried out on 20 samples taken from twenty cattle of different origins slaughtered at the Masina central abattoir. Bacteriological analyzes were carried out using the colony counting technique at the Laboratories veterinary Central de Kinshasa. Results: Cattle from Ndjili contained 130 colonies, while those from Sogenoc/ Mushie contained 150 colonies, results in excess of FNOR and FAO standards, which require 30 colonies for foodstuffs. Conclusion: Meat from cattle slaughtered at the Masina central abattoir was found to be unfit for consumption due to the high number of colonies it contained.
