Exploring Untapped Potential of Potato for Masses

Abstract: Potato (Solanum tuberosum L. ) is the most important food crop of the world. Potato crop produces more edible energy and protein per unit area and time than many other food crops. It fits well into multiple cropping systems prevalent in tropical and subtropical agro-climatic conditions. And the high profitability of potato as a cash crop has made it a viable commercial enterprise. In recent years potato processing industry has grown rapidly in India due to rapid urbanization and changing life style of the people. The protein content in potato consist a high biological value than cereals. Consequently, potato is supplementing meat and milk products by lowering energy intake and ultimately reducing food cost for poor man. Thus, the importance and potentiality of potato remain untapped for long period.
